Peach and Feta Quinoa Salad Recipe

 

Ingredients:

(Quantities will depend on how many guests you’re entertaining with your peach and feta salad)

  • Peaches (juicy ones are better)
  • Feta (go for the crumbly type)
  • Mixed Quinoa
  • Rocket
  • Pecans
  • Balsamic glaze

Steps:
  • 1. Cook quinoa as per the instructions on the packet.
  • 2. Mix with rocket. It’s good to use your hands to make sure it’s properly mixed together.
  • 3. Chop your peaches into about 6 segments and arrange evenly on the bed of rocket and quinoa.
  • 4. Crumble the feta on top.
  • 5. Roughly chop pecans to sprinkle on the feta.
  • 6. Finally, drizzle the balsamic glaze on top.
